Ingredients:
- 500 grams of chicken breasts, cut into medium pieces
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into pieces
- 1 red onion, cut into chunks
- 1 courgette, thickly sliced
- 2 tablespoons olive oil
- juice of 1 lemon
- 2 cloves garlic, minced
- 1 teaspoon of smoked paprika
- Salt and pepper to taste
- Wooden skewer sticks, previously soaked in water
Directions:
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, smoked paprika, salt and pepper. This will be the marinade for the skewers.
- Add the chicken pieces to the marinade and mix well to coat them completely. Marinate in the refrigerator for at least 30 minutes, but ideally for 2 hours for best flavours.
- Preheat the grill to medium-high heat.
- Alternately thread the marinated chicken pieces, peppers, onion and courgette slices onto the skewers, creating a colourful combination of meat and vegetables.
- Place the skewers on the hot grill and cook for approximately 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and lightly browned.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
- Serve the grilled chicken and vegetable skewers with a fresh side dish, such as a mixed salad or rice pilaf. You can also serve them with a yoghurt and mint sauce for a refreshing twist.
